Aloo paratha also known as Aloo ke Parathe, is Indian breakfast, widely loved by people of all regions of India. This Indian breakfast is made up of wheat flour, mashed aloo, spices & herbs according to your taste.
The parathas are mostly liked with white butter and pickle but children like to have it with ketchup and sauces.

How to cook Aloo Paratha
First of all, we need to make the dough of wheat flour & for that take a container or a dish and add 2 cups of (for 4 people, you can take as much according to your need), 1/4 tablespoon of salt, 1 table spoon of oil and take some water around (1/2 cup) to dough it.
Remember do not use excess water, otherwise it will make the dough wet and the whole things just gets messed up.

Remember that your dough must be soft and non-sticky.
Cover it with a cloth until we prepare the stuffing & keep it aside.
Now, for Aloo Stuffing, just need to boil the potatoes, without making them mushy.

Use a pressure cooker and add 1 cup of water and medium heat to 3-4 whistles, that's it.
When the potatoes cool down, peel its cover using your hand and mash it into a smooth format.

Remember that there should not be any solid potato left into the mash.
Most important is that do not over mash it otherwise, it will become sticky and pasty.

Now add these following things into the mash, and mix it well:
3/4 tbsp Garam Masala.
1/2 tbsp redchilli powder.
3/4 to 1 tbsp coriander powder.
1/2 chaat masala or amchur powder.
1 chopped green chilli.
1/2 tbsp salt.
1 tbsp Kasuri methi.
2 tbsp coriander leaves.

Mix all of them well and round it into small portions.

Now we need to do the same thing with the premade wheat dough, just round it into small portions.
Now sprinkle little flour on the rolling area (which we use for making chapatis), take a small portion of the dough and dip it into the flour and start rolling it like a small chapati.

Now take the spiced potato stuffing and put it into the center of the small rolled chapati.

Join all the side edges like this as shown in figure.
Again, dip this round stuffed dough into flour and start rolling it lightly into a form of chapati.
Now, the last stage is to fry the chapatis, in soya oil or olive oil. Put a pan on the gas stove and heat it well.
Add the aloo stuffed chapati into the pan and wait for it to get roasted for 2-3 min then add some oil using a spoon into it.

Now, fry it from both the side and take it out into a plate. Yummy !!! your aloo paratha is ready.
