Lemony Lemon Rice

This 10 mins recipe is quite amazing, delicious and refreshing, as lemon is a mood refresher and is very easy to cook. We require cooked rice, curry leaves, lemons & tempering spices, and peanuts are also required but they are optional. so, lets just see the recipe and have a try.




How to make lemon rice

First, we need precooked rice. You can take any normal rice which you use in day to day meals and cook it as you cook.


Now take a pan, and heat half tablespoon of oil on a medium flame.


Roast 4-5 tablespoon of peanuts until it gets a golden color.

Remove them on a bowl or a plate and keep them aside.




Next pour another 1 and 1/2 tablespoons oil to the pan & add 3/4 teaspoon mustard, 1 tablespoon urad dal and 1 & 1/2 teaspoon chana dal into it and fry them to get a golden color.






Add 1 sprig of curry leaves, 1/2 tablespoon chopped ginger, 2 red chillies and 2 chopped green chillies and fry them for 30 sec.


Then add a pinch of hing, 1/4 to 1/2 teaspoon of turmeric powder & 1/2 teaspoon salt.

Now pour 2-3 tbsps of water into it.


Now, remove the pan from the stove and add the precooked rice. Do not forget to add the lemon juice which is the most important component in it.


At last, garnish it with some curry leaves and the crunchy roasted peanuts that we fried earlier.
