Vegan carrot cake bites are the perfect amount of sweet, chewy, cinnamony, and cake-like. Ideal springtime snack for on-the-go!


These bite-sized pieces of carrot cake are the perfect combination of chewy, cinnamony, cake-like, and sweet. They have oats and coconut flecks, and almond butter gives them a creamy texture. The carrots are there, but they don't taste overly salad-like; rather, they just provide a few flecks of color, flavor, and texture to a bite of bliss that resembles cookie dough and is stored in a small jar in your refrigerator, waiting for that time at 3 o'clock to brighten your day a little.


With these little beauties, everything is fair game: breakfast bites, snacking bites with coffee, and desserty bites.


The problem about authentic carrot cake, after all, is that you want it and you want lots of cream cheese icing over it. cream cheese icing in abundance. Finally, you have it, and it really is that good. But what happens when you spike, crash, and can't get rid of the urge to visit the dentist right away? I dunno, perhaps that's just me.

These bite-sized, vegan, raw carrot cake treats.


​Ingredients:

  • 1 medium carrot, peeled and chopped

  • 1/2 cup almond butter

  • 1/2 cup pure maple syrup

  • 2 cups flaked unsweetened coconut

  • 2 cups old fashioned oats

  • 1/2 teaspoon salt

  • 1/2 teaspoon vanilla

  • 1 teaspoon cinnamon (more or less to taste)

  • white chocolate chips (optional)

For these, a food processor is a must. Please get yourself a food processor; you all know I LOVE MY FOOD PROCESSOR. The one I possess is this. (This is a sponsored link.)


Carrots come first. Put some food in and start processing. I will not ask you to grate any carrots because I dislike doing it.


The next step is to clean the carrots and pulse the oats and coconut until they resemble flour.

And for those who prefer to go above and above, white chocolate chips.


Choose some chunky nuts, cacao nibs, or vegan chips instead if you're vegan or want to keep it completely clean.


Roll, chill, and you're done.
